Culatello di Zibello PDO, renowned for its meticulousness and unparalleled nature, has been safeguarded by the Protected Designation of Origin (PDO) since 1996. This esteemed designation serves as a testament to the exceptional quality of its production process and the distinctive characteristics of the product. Each year, only a limited quantity of culatello is granted the PDO status, ensuring unequivocal excellence for the discerning consumer.

Since 2009, the producers adhering to the Consortium for the protection of Culatello di Zibello can also add their distinctive brand. The Consortium, made up of 23 manufacturing companies, in June 2010 obtained official recognition from the Ministry of Agricultural, Food, and Forestry Policies (MIPAAF), confirming the value of the protection and promotion activities of this authentic king of cured meats carried out by the Consortium.

Currently led by President Romeo Gualerzi, the Consortium undertakes to ensure that the Culatello di Zibello PDO faithfully respects the traditions and is produced according to traditional processing methods. Born to defend and promote the quality and typicality of Culatello di Zibello PDO, the Consortium brings together producers determined to preserve its origin, traditional manufacturing, and authenticity.
