It is produced in pear shapes and made in pairs tied together at the top so they can be hung up to allow the brine to drip during the ripening process. Provola with citrus fruits is enriched with Tarocco orange or Verdello lemon, which give to the paste, during the aging process, the sweet taste of orange or lemon.
